Hailing from Ballycotton our Head Chef Dan Guerin has trained under some of Ireland’s best chefs.

The CUSH menu celebrates the best that Ireland has to offer, with produce sourced from nearby farms, fish and ingredients that tell the story of the season.

Every plate reflects our commitment to craft, with traditional techniques meeting modern creativity in a way that feels both exciting and familiar.
