Cocktails

All our cocktails get their names from shipwrecks off the Ballycotton Coastline. The Cush has a long history as a Maritime bar, as can be seen on our walls, and with this menu we pay our respects to this bit of history of Ballycotton.

The “Magnificent” Old Fashioned

Bulleit Rye Whiskey, Angostura Bitters, Reunion Island Brown Sugar, with Fresh Orange Peel. This simple old school cocktail is named after the Sailing Vessel “Magnificent”, which sank off the Ballycotton Coast in 1836, while carrying arms & ammunition from Liverpool.

The “Scottish Monarch” Berry & Gin Fizz

Blackwater No.5 Irish Gin, Berry Liqueur, Sugar Syrup, Fresh Lime, Topped with Prosecco. The Scottish Monarch, a 5,043 tonne Glasgow Steamer carrying a cargo of sugar, was sunk by gunfire from U-24, 40 miles south of Cork, in 1915, while travelling from New York for Manchester.

The “Porto Novo” Negroni

Maharani Irish Gin, Valentia Island Irish Vermouth, Campari, with Dried Spanish Orange. This fresh vibrant cocktail shares its name with a Spanish Schooner which ran aground in Ballycotton and was salvaged on its way from Terceira, carrying oranges and Indian corn.

The “Sovereign” Espresso Martini

Tito’s Handmade Gluten Free Vodka, Italian Coffee liqueur, Drury’s Double Shot Espresso, Sugar Syrup. The Sovereign struck the Smiths Rock off the Ballycotton coast in 1803 from Trinidad. They were carrying a cargo that included sugar, coffee, spices, ivory, indigo, lignum Vitae, precious jewellery, and 26 guns, along with two carronades
