Since the beginning of Cush, we have tried to look at food with an open mind. Our food philosophy is simple. We source the finest, freshest seasonal produce from the waters and the wild of Ireland’s natural environment – cooked simply to highlight the flavours.


We are always changing our dishes depending on what is available at certain times, this gives us the freedom to explore and create new ideas for you to enjoy. We hope that our philosophy will inspire a new way of thinking about food.
